Coddle

This hearty, satisfying, and inexpensive meal is a stew of pork sausage chunks and bacon with sliced potatoes, onions, and sometimes barley.  Coddle is associated with Dublin.  It was supposedly a favorite dish of Jonathan Swift, and the dish is referenced in several works, including the books of James Joyce.  The term comes from the slow simmering of the dish, and is often eaten in the winter months.  Traditionally, the recipe called for the addition of a small amount of Guinness.
